We needed to get off of XenApp 6.0 or earlier and get on to XenApp 6.5. This is NOT a SalesLogix issue, this is an acknowledged CITRIX bug.......(and yes, we've been through this as we have over 150 dual 24" monitor desktop setups in our organization).
No idea on XenApp 7.0.....

that's our infrastructure guys.....and involved XenApp 6.0.
What version of XenApp are you having troubles with dual monitors?
I'm involved in a project in January to test MAC XenApp and SalesLogix.....back in the LAN SLX 7.2.2 days (circa 2010 for us) we proved that MAC XenApp Client didn't respect a user's local timezone....not a SalesLogix issue, a XenApp Client issue.
Again, this has NOTHING to do with SLX, it's a Citrix issue (if I were you I'd start looking up at the Citrix forums, talk to your Citrix reseller\consultant, etc.)....
